  As the baby in the family, I had the privilege of getting away with things my older siblings couldn't. I like to think it was because my seasoned parents wanted someone to spoil, and because they loved my great appreciation for the things they did for me.

  Nothing on this planet ever made me happier than when my mom and dad would surprise us with trips to Disney World. My parents would bring my grandmothers, cousins, aunts and uncles and it would be a large and happy family affair. My cousin Ingri and I (very nearly the same age) would romp about in glee and wonder at all the magic and engineering. 

  I'd like to mention that we still romp about in wonder and glee. Except now we have a very different crew of Disney bounders.  Husbands, partners, best friends, college buddies and sorority sisters join us now.  The two biggest trips we take are during Epcot's Food and Wine Festival, as well as Epcot's Flower and Garden festival. When we go, we tend to have parties no smaller than 6 people. Most of the time, our group is about 12 to 14 strong. It's our great love of Disney & food that bring us together.

  This year, the girls have decided to dress up in theme on 2 of the days we're at the parks. We're going to Disney Bound (where you dress as modern versions of your favorite characters). One day will be main characters and princesses. The next day will be Disney Villains. 

  It's a good thing we're such a varied bunch. Marilia will be Princess Jasmine, Stephanie will be Belle, Grace will be Ariel, Ingri will be Princess Aurora, Yuri will be Merida, Lexy will be Mr. Smee (Peter Pan) and I will be Snow White.

  Now, I should say that Snow White has always been my favorite princess. Perhaps it was because as a child I felt that I resembled her the most (physically) out of the other princesses, but it was other traits that stood out to me as well. She is an optimist, with an innocent and naive view on others; believing the there's good in all people. She's also a magnet for woodland creatures and I could empathize with that straight away.

  I've found injured birds everywhere, baby armadillos in camp sites, motherless kittens on mountains, lost dogs, ducklings crossing busy streets, turtles far from lakes and one random stray goat. It has been a life long trait.

I guess that is perhaps why, as a child, I had such a tough time eating beef,chicken, pork or fish. When I was little my mom never had to make me eat my vegetables ( I ate those first), but she had a rough time getting me to eat rice and meat. When she'd ask why, my response was the same every time... Rice tasted like nothing, meat tasted dead, but vegetables tasted bright.

  Fast forward a couple dozen years, and I still think the same. It wasn't until recently that I realized that my distaste for meat doesn't have to war with my husbands love for it. I don't have to eat it, and he doesn't have to live without it.

This makes me wonder... Would Snow White be a vegan? I think she would be.  And if so, could I attempt to do the same? 

This blog will be dedicated to my journey in being a little bit more like my favorite princess. From omnivore to ovo-lacto vegetarian... And hopefully to full fledged vegan.  I hope you can join me on my journey.
