Chia Seeds and Tummy Aches

  I made chia pudding last night and it this morning, for the first time. 

 Quick Recipe:
2.5 cups of coconut milk
.5 cups of almond milk
cinnamon
2 tbs of Agave
3 tbs of Chia Seeds


It's actually really tasty. O_O I had my doubts on how much I was going to like the texture, but it didn't bother me at all. The only issue I had was how well my stomach took to eating the pudding...

  Which is to say, not well at all.  My intestines ended up less happy than my stomach and it's safe to say that I felt the chia pudding going all the way through my system. @_@ It was rough, it was tumble and even my dormant ulcer woke up to complain.

As good as that may have tasted, I may not be eating those again.

June 1st - My first Vegan weekend. :3

  It's strange to be dairy and egg free. I have to say, I don't miss meat at all, and I've been incredibly satisfied with all the recipes I've been trying.  Some have been more successful than others, but all in all - I've been really happy and I feel really healthy.

Weekend Menu breakdown:

Friday Brunch:
-- Mushroom & Tofu stir fry in mushroom gravy (delicious!)

Friday Dinner:
-- Lentil soup


Saturday Morning:
-- Coconut yoghurt with a table spoon of my almond date crumble

Saturday Snack:
-- Vegan cupcake at Jen's wedding

Saturday Dinner
- Deconstructed Sushi with quinoa, asparagus, sprouts and avocado

Saturday Dessert
- Baked apple with cranberry raisins, agave, cinnamon and a bit of almond date crumble



Sunday Breakfast
- Soy yoghurt with a table spoon of almond date crumble

Sunday Lunch
 - Italian bruschetta topping (minus cheese) over sprouts and avocado on two small pieces of wasa.

Sunday Dinner
- Spiralized zucchini with a cashew creme and heirloom tomatoes with basil, cilantro pesto and a sundried tomato paste (yummy!)

Sunday Dessert
- Baked Apple


I'm going to try a pasta free lasaƱa today, with eggplant. <3 I'm nervous, but also pretty excited.
